刘国荣教授在Frontiers in Microbiology和Journal of Food Quality期刊上发表两篇论文

近期,我司刘国荣教授在国际期刊上发表乳酸菌细菌素相关学术论文。
其中一篇题为“Genetic and biochemical evidence that Enterococcus faecalis Gr17 produces a novel and Sec-dependent bacteriocin, Enterocin Gr17”发表在《Frontiers in Microbiology》期刊上。本研究以分离自中国传统低盐发酵全鱼中的产细菌素优良菌株Enterococcus faecalis Gr17为研究对象,对其进行全基因组测序和所产细菌素提纯鉴定,旨在为探明细菌素Enterocin Gr17的生物合成及分泌机制提供遗传与生理生化证据。研究结果显示,细菌素Enterocin Gr17是一种新型信号肽分泌依赖型广谱细菌素,有作为天然食品生物防腐剂的巨大应用潜力。
另一篇题为“Effects of bioactive packaging films incorporated with bifidocin A on microbial reduction and quality parameters of chillstored Spanish mackerel (Scomberomorus niphonius) fillets.”发表在《Journal of Food Quality》期刊上。本研究重点探讨了负载细菌素bifidocin A抗菌活性纤维素包装膜对蓝点马鲛鱼鱼片的冷藏保鲜效果。研究结果发现,负载4×MIC细菌素bifidocin A的生物活性包装膜可明显抑制鱼片冷藏过程中假单胞菌和肠杆菌科细菌的生长以及总挥发性碱性氮、硫代巴比妥酸和次黄嘌呤的积累,并将保质期延长到12天,且在整个贮藏过程中保持更好的感官特性,是提高蓝点马鲛鱼鱼片冷藏保鲜效果的有效新手段。本研究也为乳酸菌细菌素作为天然食品生物防腐剂在食品工业中的产业化应用提供了新思路。
